1/2 cup | Honey |
1/2 cup | Unsweetened cocoa powder |
2 1/2 cups | Lite whipped topping |
1 lb. | Ripe fresh California nectarines |
As needed | Mint sprigs, for garnish |
Directions
In 1-cup glass measuring cup, sprinkle gelatin over water. Let stand 2 minutes. Microwave on high power 40 seconds to dissolve; set aside. In mixing bowl beat honey and cocoa powder until smooth. Stir in ½ cup of the whipped topping. Blend enough of the nectarines to make 1 cup puree; stir into cocoa mixture. Fold in remaining 2 cups whipped topping. Chill until partially set, 20 to 30 minutes. Spoon into 6 stemmed glasses or dessert dishes. Chill. Garnish with mint. Serve with remaining nectarines, sliced. (Makes 6 servings)
